When &27 opened in 2015 there was quite a buzz about it. New restaurants on Whyte Ave happen all the time, but none with the amount of thought and attention to detail that Chef Nathin Bye was going to bring with his new concept, &27. Named after the unofficial 27th letter of the alphabet (the ampersand) and branded by my beautiful wife Nicole Winski the team at KEEN Creative, we needed some spectacular photography to set the stage for the forthcoming dining experience. Before the restaurant opened, we planned to shoot as many of the dishes as possible that had been completed for the upcoming menu. Over the course of 4 hours we whizzed through appetizers, mains, drinks and desserts, capturing all the amazing details within, even though they wouldn’t open for another 2 months.
